THE EFFECT OF CARBOPOL 940 CONCENTRATION AS A GELLING AGENT ON THE PHYSICAL STABILITY AND ANTIOXIDANT ACTIVITY OF CUCUMBER EXTRACT (Cucumis sativus.L.) GEL FORMULATION
Abstract
Cucumber (Cucumis sativus L.) has numerous health benefits, including its ability to act as a free radical scavenger, often referred to as an antioxidant. In this study, cucumber is formulated into a gel to enhance its practical value as an antioxidant. The aim of this research is to determine the effect of Carbopol 940 concentration as a gelling agent on the physical stability quality. Cucumbers were extracted using 70% ethanol through a maceration method. The gel formulations of cucumber extract were created with three variations of Carbopol 940 concentrations: 1%, 1.5%, and 2%, which were then tested for physical quality. The antioxidant content in the gel was measured using the DPPH method. The data will be analyzed using One-way ANOVA and post hoc Tukey HSD tests, while the results of the physical stability tests will be processed using paired T-tests. The results of the physical stability tests indicate that formulations FI, FII, and FIII meet the criteria for organoleptic testing, homogeneity, viscosity, pH, spreadability, adhesiveness, and stability. The gel formulations exhibited antioxidant activity with an average IC50 of 75.60 ppm, categorizing it as strong since the range for strong activity is between 50 - 100 ppm.
